Every parent knows how creative you have to be in order to make sure your kids are eating healthy. The last few week my little girl has been addicted to popsicles. I’ve even caught her going to the freezer in the morning and try sneaking one for breakfast! I didn’t even know she could open the freezer! That’s when I decided to take routine breakfast items and make them “new” for her. Not only can these breakfast popsicles be nutritious, they’re certainly refreshing especially now that we’re in the middle of summer.
The best part about making these is that there are so many different combinations you can make, they never get boring. She also loves the fact that she’s taking part in making her own breakfast, which makes it even more special for her.
For our strawberry smoothie popsicles we used:
1 cup of greek yogurt (vanilla)
1 cup Coconut Milk
1 cup strawberries
1 tablespoon of honey
Blend together and pour in to fun popsicle molds. We used the ones grandma sent her.
Freeze for at least 4 hours or overnight.
Combine Ingredients!Blend!
Freeze, then enjoy!
Having these popsicles ready to go cuts down on the time you spend making breakfast during those busy mornings. They’re also are great for adults too as a grab and go item or as a cool sweet snack during the day.

So whatever the combination, these popsicles can be flavorful, guilt free, full of fresh fruits and veggies with very little prep time. All things kids and parents love.
