With school back in session and three kids to feed, cooking with a crock-pot has become a weekly routine. If we know the coming week is going to be busy, we usually have two going on Sunday. Let’s face it, my weekends are packed with either catching up on some housecleaning, laundry or just having fun with the kids. The last thing I want to spend time on is prepping meals for the week. This is an easy, no fuss way of doing that. One of our favorite dishes is pork tacos.
Here is a simple recipe for Crock-Pot Carnitas.
What you’ll need:
3lb pork shoulder roast
Salt (to taste) I used 1/4 tsp.
Pepper (to taste) I used 1/4 tsp.
2 Bay leaves
1.5 tsp. minced Garlic
1 Orange
1 Lemon
1 tsp. Chipotle powder
(I used 1 tsp. green chile seasoning I bought in New Mexico)
Cut up onion and place at the bottom of crock-pot
Rub dry ingredients and garlic all over roast. Place roast in pot fat side up
Squeeze juice of one orange all over roast. Slice lemon and place slices inside pot
Cook on low for 8 hours
Shred roast with 2 forks (the roast should fall apart on its own)
This recipe is great not only for tacos, but you can also make shredded pork burritos or now that football season has started, how great would this be for nachos? Add your favorite toppings or salsa and this dish is sure to be a hit with your family.
