The Unicorn Frappuccino from Starbucks has been an internet sensation to rival Grumpy Cat and LuLaRoe leggings. Since it’s launch every time I click into social media there is another selfie of someone trying the pink and blue color changing concoction. Now I am all for everything unicorn (whether it be cake, cookies, or clothes) and wanted to give this drink a go…until I started reading the reviews.

  1. IT’S MANGO FLAVORED! Why in the world would Starbucks ruin such a pretty drink with a flavor like MANGO!? Mangos aren’t pink OR blue, so what crazy person thought it should lead the charge for this drink that was bound to take over Instagram. How did some highly caffeinated focus group think that this was a good idea?
  2. The sugar content is insane! With a higher amount of sugar than multiple candy bars just thinking about the amount of sugar in one of these magical multicolored drinks makes my cavities ache. 
  3. Nothing ever looks as good as the picture. Stores all over the country have been running out of the blue stuff, whipped cream, and patience yet people are still wanting their Unicorn Frappuccinos by the drink carrier full! Is it just as “good” with out the full experience? I can’t imagine that it is.

After all of these mediocre reviews I resisted spending $5 on one of these…even if it was just for the Instagram gold. So I rolled up my sleeves and decided to get in the kitchen to see if I could create something a little tastier (and healthier) for my kiddos after-school snack. 

Unicorn Smoothies

When the kids got home from school I set them up in homework land and got blending. My unicorn smoothies have the flavors I was expecting from Starbucks’ frapp – strawberry, banana, blueberry, vanilla, marshmallow. 

Ingredients –  Makes 2-3 smoothies

Smoothie

  • Strawberries
  • Blueberries
  • 1 cup Milk (we used almond)
  • frozen bananas (2)

Toppings

  • heavy whipping cream
  • splash vanilla
  • 3 TBSP powdered sugar
  • 1 TBSP meringue powder
  • sprinkles and sugars of all sorts

Directions

Smoothie

  1. Blend strawberries, 1/2 of bananas, and 1/2 cup of milk. Set aside
  2. Rise blender and repeat with blueberries, 1/2 bananas, and 1/2 cup of milk. Set aside.
  3. Pour strawberry and blueberry mixtures into drinking cup (A clear cup is best for the effect!) at the same time. They will mix together a bit, but mostly stay side by side. 
  4. You can drink your smoothies like this, but then you are missing the fun unicorn bits.

Toppings

  1. Add heavy whipping cream, vanilla, powdered sugar, and meringue powder into stand mixer. Start mixing on low but increase speed once powdered sugar is incorporated. Mix a few minutes until stiff peeks are formed. 
  2. Top your smoothie with as much or as little whipped cream and sprinkles as suit your tastes.
