I love pumpkin in all forms.
Cookie.
Fall is my favorite time of year and I love all the fall treats!
My youngest loves to bake with me so when she asked to make chocolate chip cookies today, I agreed – but I suggested a twist.
“Let’s add pumpkin to the cookies!”
She agreed and the end result are the most perfectly soft cookies!
Ingredients:
- 1 stick unsalted butter – softened
- 3/4 cup granulated sugar
- 1T pumpkin pie spice
- 1T cinnamon
- 1/2 cup pumpkin puree (place the puree on at least three sheets of paper towel and gently squeeze water out of it – go slowly so you don’t bust through the paper towel sheets but removing moisture will help the overall texture of the cookie)
- 1 1/2 C whole wheat flour (trust me, you won’t know the difference and you get a lot of great fiber in these cookies from the wheat flour!)
- 1T vanilla extract
- 1t baking powder
- 1/4t salt
- 1 bag dark chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Cream butter and sugar.
- Add pumpkin pie spice, cinnamon, salt, vanilla extract and pumpkin puree – mix throughly.
- Add in flour in 1/2 cup increments.
- Add in chocolate chips until combined.
- Place onto cookie sheet – will make 12 large cookies.
- Bake for 14 minutes.
- Let cool and enjoy!
