Fall is my favorite time of year and I love all the fall treats!

My youngest loves to bake with me so when she asked to make chocolate chip cookies today, I agreed – but I suggested a twist.

“Let’s add pumpkin to the cookies!”

She agreed and the end result are the most perfectly soft cookies!

Pumpkin Chocolate Chip CookiesPumpkin Chocolate Chip Cookies

Ingredients:

  • 1 stick unsalted butter – softened
  • 3/4 cup granulated sugar
  • 1T pumpkin pie spice
  • 1T cinnamon
  • 1/2 cup pumpkin puree (place the puree on at least three sheets of paper towel and gently squeeze water out of it – go slowly so you don’t bust through the paper towel sheets but removing moisture will help the overall texture of the cookie)
  • 1 1/2 C whole wheat flour (trust me, you won’t know the difference and you get a lot of great fiber in these cookies from the wheat flour!)
  • 1T vanilla extract
  • 1t baking powder
  • 1/4t salt
  • 1 bag dark chocolate chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar.
  3. Add pumpkin pie spice, cinnamon, salt, vanilla extract and pumpkin puree – mix throughly.
  4. Add in flour in 1/2 cup increments.
  5. Add in chocolate chips until combined.
  6. Place onto cookie sheet – will make 12 large cookies.
  7. Bake for 14 minutes.
  8. Let cool and enjoy!
